Restaurant Fauna is based on love and respect for nature and all living things that surround us. By working dynamically with the natural changes of the seasons, we make the best use of the resources we can harvest from the nature around us.

Sustainable gastronomy
Over time, Restaurant Fauna will build up a larger self-supply of vegetables, herbs and fruit, partly via own production, and in close cooperation with quality-conscious and uncompromising local pioneer producers.
We believe that, through our always ambitious and natural joy for authentic gastronomy, we can give our guests experiences that reflect the essence of a well-prepared meal based on the distinctive characteristics of the season.
Our ingredients
When we select the very best ingredients, we always strive to use seasonal greens, with a focus on ecology, and trade with local producers as far as possible.
Foraging
In the local forests, we greatly enjoy foraging. In this way, we utilize the natural resources that nature gives us throughout the season.
